Mayse & Associates Architects are proud to have partnered with Zoe’s Kitchen to reimagine their fast casual Mediterranean dining experience through a bold and modern next generation restaurant prototype. Designed for both freestanding buildings and in line tenant spaces, the new prototype establishes a refreshed architectural identity that is clean, contemporary, and visually compelling. A signature illuminated tower featuring simplified “ZK” branding replaces the brand’s older striped awnings, creating a recognizable beacon that strengthens street presence and enhances visibility in competitive markets. This modernized exterior sets the tone for a revitalized brand experience the moment guests arrive.

The design extends its modern sensibilities into the outdoor environment with a fully conditioned patio, complete with heating and cooling, to support dining throughout the year. Crisp white epoxy tables, white bench seating, and an ocean blue floor inspired by Mediterranean coastlines create a bright and inviting destination that celebrates the brand’s heritage. This exterior transformation communicates freshness, openness, and hospitality. Inside, the prototype blends Mediterranean warmth with a clean modern aesthetic. Calming greens, whites, and beiges create a serene palette, while intricate Spanish encaustic style patterned tiles add authentic texture reminiscent of European and Moroccan craftsmanship. The open display kitchen serves as the interior’s focal point, offering guests a transparent culinary showcase where they can see and hear fresh food being prepared, allowing natural sounds and aromas to drift into the dining room and reinforce Zoe’s dedication to scratch made Mediterranean flavors.

Mayse & Associates Architects are proud to have partnered with Zoe’s Kitchen to bring this modern prototype to life through a comprehensive suite of services that includes full architectural design, interior design, exterior branding, kitchen layout planning, MEP coordination, and complete construction documents. The team also developed a full site adapt design for a freestanding location in Tampa, Florida, demonstrating the prototype’s flexibility across a range of real estate conditions. The resulting design strengthens Zoe’s Kitchen’s brand identity, improves operational efficiency, enhances the guest experience, and supports a scalable model that positions the company for continued growth.
