Located along the active East Freeway corridor, the newly constructed freestanding Saltgrass Steak House in Baytown, Texas represents a refined evolution of the brand’s iconic Texas-inspired dining experience. Completed in 2016 for Landry’s Restaurants, Inc., the ±7,760 square foot restaurant showcases a modern “casual plus” prototype that blends rustic character with contemporary performance. Bold stone masonry, heavy timber details, and a warm lodge-inspired presence establish a strong architectural identity that is immediately recognizable as Saltgrass.
Inside, guests are greeted by a signature indoor fireplace and the brand’s collection of classic “cattle kitsch” memorabilia that together create an atmosphere that is welcoming, familiar, and unmistakably Texan. The restaurant features a private dining room that seats up to 85 guests, a high energy full service bar designed for sports viewing and social interaction, and a scratch kitchen supported by a streamlined back of house layout that helps maintain efficiency during peak dining hours. These elements work together to support high volume operations in Baytown’s growing retail corridor.
Mayse & Associates Architects, with Chris Cooper leading the charge, served as the Architect of Record, partnering with Landry’s Restaurants to bring a refined and more efficient prototype to the Baytown market. The team delivered a reduced and streamlined building design that maintained the signature Saltgrass guest experience while improving operational flow and long term performance. Key achievements included lowering overall square footage without sacrificing functionality, enhancing kitchen movement for faster service, reducing construction costs through thoughtful space planning, and executing a full site adaptation tailored to the specific characteristics of the property. The result is a high performing, brand consistent restaurant that maximizes guest comfort, operational output, and value for the client.
